Crazy Talk


I ran a little father than intended yesterday. The plan was to run on a series of trails from my house to the park where Liam has soccer class, watch Liam's class, then go home, but the trail was much more challenging (and long) than I thought, and Liam and Doug ended up having to wait for me. It was a fabulous run, though - Instmapper says 7.7 miles, but it missed some of the trail near the end and always underestimates, so I'm guessing the entire run was more like 8.2-8.4 miles. Woot!

CSA Bounty

Although I love getting veggies through my CSA membership, I'm constantly challenged to find easy recipes for using all the stuff! I tried a recipe the other day that turned out to be really excellent, and I'm planning on making it again. It's adapted from a recipe I found in Cooking Light - I basically just omitted the cauliflower and used veggie broth instead of chicken. I garnished with turkey bacon, but tried it later without and it was just as good.

Potato-Leek Chowder

Ingredients

  • 1 tablespoon olive oil
  • 3 cups finely chopped leek (about 4 leeks)
  • 5 cups fat-free, less-sodium chicken broth
  • 3 cups (2-inch) cubed peeled Yukon gold or red potato
  • 3 cups (2-inch) chopped cauliflower florets
  • 1 cup fat-free milk
  • 1/4 teaspoon freshly ground black pepper
  • 1/8 teaspoon salt
  • 1 (14 3/4-ounce) can cream-style corn
  • 3 bacon slices, cooked and crumbled (drained)

Preparation

Heat oil in a large Dutch oven over medium heat. Add leek; cook 15 minutes or until tender, stirring frequently (do not brown). Set aside.

Combine broth, potato, and cauliflower in pan; bring to a boil. Reduce heat, and simmer 25 minutes or until potato is tender. Cool 10 minutes; stir in milk. Place one-third of potato mixture in a blender; process until smooth. Pour pureed potato mixture into a large bowl. Repeat procedure twice with remaining potato mixture.

Return pureed potato mixture to pan; stir in leek, pepper, salt, and corn. Cook over medium-high heat 5 minutes or until thoroughly heated, stirring frequently. Sprinkle with crumbled bacon just before serving.

More running

Tried extending my run a bit this week. InstaMapper says it was 6.3 miles, but I'm pretty sure it was a bit more - InstaMapper usually underestimates. The next question, though, is - where do I go from here?

Fun Saturday run!

I decided to try a new route today, and ran some paved and unpaved trails to the park where I had the 5K race last week. It was really scenic and peaceful, running through the woods and around the lake. I'll have to go there again.

Black Hill 5K Half and Half

I ran my first race in over 7 years today; it was a hilly, half-road, half trail run in a park near my house. I was so nervous at the beginning that I thought I might throw up, but in the end I did better than I expected (apx. 31 minutes), especially considering that I've only been running again for a month or so and am getting over a cold. I'm still waiting for the results to be posted, but I think I was 6th in my age group (women 40-49), and 103rd overall (in a field of about 200).

It looks like the GPS is underestimating a bit, probably because there aren't enough data points. A nice record, though.

I'm back

After my initial resolve to start a blog, it didn't really go anywhere. I think that, after Fergus died, I didn't really feel like coming here for a while. However, I'm now ready to try some new stuff, so we'll see how it goes. No promises.

First, I should mentioned that I've started running again. Very. Slowly. However, I did a cool thing with my iPhone on my run this morning and I want to try it out:
